Oskar is nipping at my toes.

Lately I have been making Boubalech ( or Matzoh Farfel Pancakes)
I don't really have an exact recipe as of yet. This is probably because they are a piece of cake. Pancake.
I use my own ground matzoh.Just throw crackers into food processor.(This should be just lying around the house at this point so make in advance)
I whip together 2 eggs and almond milk (This could be made as well. Just soak almonds for six hours or overnight then put into food processor.
Add vanilla from bean if so desired. Strain. Will last for two weeks. Delicious)
There are many variations of this recipe. Some prefer egg whites beaten until fluffy( love) then folded into Matzoh, cream added, vanilla. Then soaked over night.
I like to keep it quick and simple. Children are hungry. Where was I.
Oh yes! Then mix farfel (about a cup) with egg mixer, some cinnamon and sugar, pinch of salt, and then add fruit. Today I have fresh apricots.
Heat oil in a pan. Cast iron prefered. Then spoon in batter and cook until there is a nice golden edge. Serve with your favorite topping. Oskar's was plain. Lucy had some maple syrup and homemade, strained, yogurt ( I will have to do a post on making yogurt without a yogurt making machine now that there is humidity and heat outside).
These are so good and they are extraordinarily easy to manage first very early in the morning.

Oh, I forgot to mention that if your making your own farfel use unsalted matzoh.

Finished.
